The great midweek meal challenge

I learned to cook was “apricot chicken”. You know the one. That classic 70s housewife favourite, handed down proudly like 30-day muffin mix and self-saucing meatballs. It’s not particularly South African (I found a recipe on an American site) and everyone has their own version, but the essential ingredients appear to be chicken thighs, apricot jam (or in our case, Liqui Fruit)
