KU KU-YE BADEMJAN

This ku ku dish looks spectacular left whole and cut at the table. It’s also perfect to take on a picnic.

Serves 6

INGREDIENTS

• 4 young, firm eggplants,• Olive oil & butter, for frying & baking• 3 red onions, finely sliced• 3 garlic cloves, chopped• 2 tsp each of ground turmeric & cumin• 1 tsp ground cinnamon• 1 large bunch flat-leaf parsley, chopped• 1 small bunch mint, chopped• 6 eggs• 2–3 tbsp breadcrumbs• 2–3 tbsp barberries, soaked for 5 mins, then drained• sea salt & freshly ground black pepper
