⅔ cup uncooked orzo
1 cup fat-free (skim) milk
3 egg whites
¼ teaspoon salt (optional)
⅛ teaspoon ground nutmeg
⅛ teaspoon black pepper
1 package (10 ounces) frozen chopped spinach, thawed and pressed dry
4 tablespoons grated Parmesan cheese, divided
¾ cup fresh whole wheat bread crumbs*
1 tablespoon unsalted butter, melted
