Mango Mojito Breakfast Bowl
Serves 1
¾ cup packed baby spinach
3 tablespoons unsweetened vegan milk
1 banana, sliced and frozen
1 tablespoon avocado
1 tablespoon chopped fresh mint
1 teaspoon lime juice
½ cup ice
¼ cup diced mango
4 mint leaves
Into a blender, add spinach, milk, banana, avocado, mint, and lime juice, and blend until creamy. Add ice and blend until smooth. Transfer mixture to a bowl and top with mango and mint leaves.
