Gluten-free and FABULOUS

CHOCOLATE TRUFFLE TORTE

This beautifully decadent chocolate torte will make a serious impression.

SERVES 16

500g (1lb 1oz) gluten-free dark chocolate, broken into squares
250g (9oz) unsalted butter, cut into cubes
4tbsp rum, brandy or Kahlúa
8 large eggs
100g (3½oz) golden caster sugar
Half-fat crème fraiche or Greek yogurt, to serve

For the ganache:

250g (9oz) gluten-free dark chocolate, broken into squares

For the decoration:

Chocolate curls
Crystallised violets

You will need:

20cm (8in) spring-form cake tin, lined with baking parchment

1 Preheat the oven to 220C/Gas 7. Melt the dark chocolate, butter and rum in a heatproof bowl set over a pan of gently simmering water.
