BAKED HONEY CINNAMON RICE PUDDING

Serves 6–8

• 50g / 1.8oz unsalted butter, plus extra for greasing• 3 tbsp (60ml / 2 fl oz) honey• 1L• 3/4 cup (180ml / 6 fl oz) thickened cream• 2 tsp (10ml / 0.34 fl oz) vanilla paste• 1 tbsp (20ml / 0.7 fl oz) ground cinnamon• 100g / 3.5oz arborio or short-grain rice• zest of 1 lemon• pinch of salt• 1 extra tsp (5ml / 0.17 fl oz) ground cinnamon, for sprinkling on top• extra cream and frozen berries, to serve
