SHRIMP EGG ROLLS WITH PEPPER JELLY DIPPING SAUCE

Makes 10

Serve these as a starter or side at your next get-together—the flavor-packed, deep-fried goodness is sure to steal the show.

Sauce:

½ cup red pepper jelly
2 tablespoons fresh lime juice
2 teaspoons light sesame oil
¼ teaspoon soy sauce

Egg rolls:

2 tablespoons red pepper jelly
2 tablespoons olive oil, divided
1 tablespoon apple cider vinegar
½ teaspoon Cajun seasoning
¼ teaspoon kosher salt
12 ounces chopped deveined peeled shrimp
1¾ cups shredded green cabbage
¾ cup chopped green onion
¼ cup matchstick carrot
1 large egg
1 tablespoon water
10 egg roll wrappers
Vegetable oil, for frying
Garnish: sliced green onion

1. For sauce: In a small bowl, whisk together all ingredients; cover until ready to serve.
