Makes 1 (10-inch) loaf

½ pound bacon, chopped
2 cups plain yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1½ teaspoons kosher salt
2 large eggs
2½ cups whole buttermilk
4 tablespoons unsalted butter, melted
1 cup Classic Pimiento Cheese (recipe follows), plus more to serve
2 jalapeños, seeded and minced
