Coconut oil is extracted from the meat or milk of coconuts harvested from the coconut palm (Cocos nucifera). Correct harvesting is important for oil production. Coconuts are picked between the ages of two and 20 months, but immature nuts produce an inferior oil product with lower yields.
The coconut oil can be extracted by dry or wet processing. With dry processing the meat of the coconut is extracted from the shell and dried (copra) which is then pressed traditionally or dissolved with solvents
