BAKED PRAWNS WITH FETA

SERVES 4 PREPARATION: 10 MIN COOKING: 30 MIN

1kg uncooked medium king prawns, shelled, deveined
400g readymade tomato pasta sauce
30ml (2T) fresh oregano or parsley, coarsely chopped, plus extra for sprinkling
salt and freshly ground pepper
100g feta, crumbled

TO SERVE

fresh crusty bread (optional)

Preheat the oven to 180°C. Grease an oven-proof dish with nonstick spray.

1 Combine the prawns with the pasta sauce and fresh herbs and arrange in the ovenproof dish. Season with salt and pepper.

2 Sprinkle the crumbled feta over, then bake uncovered for about 30 minutes until the prawns are cooked through.

3 Sprinkle the extra herbs over.

Serve with fresh crusty bread (if using).
