Easy Thai prawn curry

This sensational curry is made using a quick-and-easy homemade curry paste and coconut milk.

SERVES 4 PREP 10 MINS COOK 30 MINS

For the Thai curry paste:

2 large red chillies, deseeded and chopped
1 lemongrass stalk, chopped
½ red onion, chopped
4 garlic cloves, chopped
20g fresh ginger root, peeled and roughly chopped
½tsp ground coriander
¼tsp ground turmeric
Pinch of ground cinnamon
2tbsp coconut oil, melted

For the prawn curry:

1tbsp coconut oil
600g uncooked king prawns, peeled
400ml full-fat coconut✱ ✱ ✱
