Easy Thai prawn curry
This sensational curry is made using a quick-and-easy homemade curry paste and coconut milk.
SERVES 4 PREP 10 MINS COOK 30 MINS
For the Thai curry paste:
✱ 2 large red chillies, deseeded and chopped
✱ 1 lemongrass stalk, chopped
✱ ½ red onion, chopped
✱ 4 garlic cloves, chopped
✱ 20g fresh ginger root, peeled and roughly chopped
✱ ½tsp ground coriander
✱ ¼tsp ground turmeric
✱ Pinch of ground cinnamon
✱ 2tbsp coconut oil, melted
For the prawn curry:
✱ 1tbsp coconut oil
✱ 600g uncooked king prawns, peeled
