LOW-CAL chicken & mushroom one-pot

Short on time in the kitchen? A little shopping prep and you can whip up a weeknight meal in a jiffy that everyone will love. As the temperature dips, go from stovetop to tabletop with this warming and healthy chicken and mushroom casserole.

cauliflower, kale & pepita soup

serves 6 I prep 25 mins (+ 10 mins cooling) I cooking 40 mins

1 tbs extra virgin olive oil, plus extra, to serve
20g butter
1 small brown onion, finely chopped
2 garlic cloves, chopped
1 head (about 750g) cauliflower, chopped
1.5L (6 cups) chicken or vegetable stock
150g pre-chopped kale leaves
80ml (1/3 cup) thickened cream, plus extra, to serve
1 tbs pepitas, toasted
20g (1/4 cup) finely grated parmesan
