Classic Christmas Cookies

½ cup unsalted butter, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
¼ cup unsulphured molasses
½ teaspoon orange zest
2 cups all-purpose flour
1 tablespoon pumpkin pie spice
½ teaspoon baking soda
¼ teaspoon kosher salt
½ cup turbinado sugar

1. In the bowl of a stand mixer fitted with the paddle attachment, beat butter, granulated sugar, and vanilla at medium speed until fluffy, 3 to 4 minutes, stopping to scrape sides of bowl. Add egg, molasses, and orange zest, beating well.
