A Galánta Teatime

Ham & Irish Cheddar Tea Sandwiches

Makes 8

2 tablespoons mayonnaise
¼ cup whole grain mustard
4 slices white sandwich bread
3 ounces Irish Cheddar cheese*, very thinly sliced
½ pound thinly sliced deli ham
½ cup rocket (arugula)

• In a small bowl, stir together mayonnaise and mustard to make an aïoli.

• Spread a layer of aïoli onto bread slices. On 2 bread slices, layer cheese, ham, and rocket. Cover with remaining bread slices to make 2 whole sandwiches.

• Using a serrated bread knife in a gentle sawing motion, trim and discard crusts from sandwiches. Cut each sandwich into 4 rectangular tea sandwiches. Serve immediately, or cover with damp paper towels, place in a covered container, and refrigerate for a few hours until serving time.

*We used Dubliner Aged Cheddar.
