For a slightly more substantial potato salad, add some hardboiled eggs. Toss through salad just before serving.
Green bean salad
SERVES 8 PREP AND COOK TIME
20 MINUTES
800g green beans
1 small red onion (100g), sliced thinly
1 trimmed stalk celery (100g),
sliced thinly on the diagonal
½ cup (70g) hazelnuts,
roasted, skins removed
⅓ cup flat-leaf parsley leaves
FRENCH DRESSING
⅓ cup (80ml) red wine vinegar
2 teaspoons Dijon mustard
