Gingerbread dough
PREP TIME 20 MINUTES (+ REFRIGERATION) MAKES 30 MEDIUM-SIZED BISCUITS
125g butter, softened
½ cup (110g) firmly packed brown sugar
1 egg yolk
2 3/4 cups (405g) plain flour
1 tsp baking soda
3 tsp ground ginger
½ cup (125ml) golden syrup or treacle
ROYAL ICING
1 egg white
1½ cups (240g) icing sugar, approx
Beat the butter and sugar in a large bowl with an electric mixer until combined.
