GRILLED LAMB WITH SWEET MINT DRESSING

SERVES 4 PREP AND COOK: 30 MINS

600 baby potatoes, halved
2 tblsps olive oil
½ cup grated parmesan
600g lamb rump steaks, trimmed, cut into pieces
1 red capsicum, cut into 4cm pieces
100g mixed lettuce
leaves

DRESSING

1 cup fresh mint leaves
¼ cup chopped fresh chives
¼ cup lemon juice
⅓ cup olive oil
2 tsps brown sugar

1 Place potatoes, cut-side down, on a board. Make thin cuts, evenly spaced, about halfway through. Toss with half the oil. Season with salt and pepper. Place in a roasting pan.

2 Cook in a very hot oven (240°C) for 20 minutes, or until tender. Sprinkle with parmesan. Cook for a further 5 minutes, or until lightly browned.

Meanwhile, toss lamb and capsicum with remaining oil. Season. Thread onto 8
