INDIAN–STYLE LENTIL, RICE & ZUCCHINI FRITTERS

1 red capsicum, deseeded, diced
1 large carrot, grated
1 zucchini, grated, squeezed of excess moisture
2 teaspoons curry powder
1 x 400g can no-added-salt brown lentils, rinsed, drained
1 cup cooked brown rice
4 green shallots, thinly sliced
2 tablespoons chopped fresh coriander
1 egg
¼ cup gluten-free plain flour
Mixed salad leaves & sliced baby cucumbers, to serve
¼ cup reduced-fat plain yoghurt, to serve
