Sweet Strawberries

STRAWBERRY OAT PECAN COOKIES

Makes about 24

⅔ cup unsalted butter, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon kosher salt
½ cup old-fashioned oats
½ cup chopped pecans
¾ cup chopped fresh strawberries
2 tablespoons confectioners’ sugar

1. Preheat oven to 400°. Line baking sheets with parchment paper.

2. In a large bowl, beat butter, granulated sugar, and vanilla with a mixer at medium speed until fluffy, 3 to 4 minutes, stopping to scrape sides of bowl. Beat in egg.

In a medium bowl, whisk together flour, baking powder, and salt.
