SERVES 4 PREP 20 MINS COOK 35 MINS

6 sausages of choice
1 red capsicum, seeded, thickly sliced
1 eggplant, sliced
1 zucchini, thickly sliced
1 red onion, sliced
¼ cup olive oil, plus 1 tbsp extra
800g can whole tomatoes
2 garlic cloves, crushed
1 tsp dried Italian herbs
1 cup sourdough breadcrumbs

1 Preheat oven to 200°C.
