-INTRODUCTION-
I am a mother of 3 beautiful children aged 8, 6 and 2. I first started out on my journey of creating these recipes after finding out our first born daughter, at age 7 months, had severe food allergies and Anaphylaxis. At first finding out this news, that if she ate the wrong foods it could be life threatening, was quite overwhelming and the battle in the kitchen started that very day. There have been many tears but also many laughs and smiles along the way. It is these recipes that brought smiles and kept our family enjoying lots of different foods together over the years. I found at the beginning to be cooking separate meals for our daughter and meals for everyone else. The recipes I found, eliminating the foods she couldn’t have, were quite bland or so different to what we ate or already cooked. Also having another child who didn’t have these allergies I didn’t want to be serving and cooking different foods. I wanted to try and re-create some recipes to be as close to the family meals we already enjoyed. Also making cakes and treats I found hard and later school lunchbox treats. All the recipes in this book and ideas in this book are from years of trial and triumph. Our daughter is now 8 and although told she may outgrow her allergies by school age, she is still allergic to the same foods, so I will continue my creating in the kitchen. I first of all created these recipes for our daughter as she wasn’t improving with her allergies, it became clear to me that she may need these to carry through her life and I made it my duty to get busy and no matter how many fails in the kitchen I would keep working until I had a winner and I would document that recipe for her. Over time and searching for allergy free cookbooks and ideas, I often found my search would come to find nothing new. Every now and then, something would turn out great that I had cooked and I would be enthused again. Fresh ideas, a new meal that everyone enjoys and a huge smile on our daughters face as she eats a big birthday cake made me want to share these recipes with other families. It is parents just finding out their child has an allergy or parents that have gone through all the cookbooks and are looking for something new and also those children that took those allergies into adulthood that I hope this will give you fresh ideas and new things to try. I have also included a few valuable lessons and tips I’ve picked up along the way. What I can add now is that our 8 year old daughter is a happy, healthy 8 year old girl. I hope this cookbook is helpful to others with either the recipes to try or the helpful tips. Everyone’s’ experience with food allergies is different and unique. I have built this book and ideas from my own experience of
