Let’s make some red velvet whoopee pies.
tmp_0189fcf9bf9402685bd1dca3ff6b5198_QrW9yE_html_m5e8d003e.jpgLet’s start by making our batter. Into a mixing bowl, I’ve got 125 grams of butter at room temperature, so it’s nice and soft and easy to mix together.
tmp_0189fcf9bf9402685bd1dca3ff6b5198_QrW9yE_html_121318ae.jpgTo that, I’m adding ½ cup of caster sugar, or super fine white sugar, ½ cup of brown sugar, and about a teaspoon of vanilla extract.

tmp_0189fcf9bf9402685bd1dca3ff6b5198_QrW9yE_html_1c24ffad.jpgNext, I’m adding in one teaspoon of bicarbonate soda, or baking soda, 1/4 cup of cocoa powder, and one teaspoon of red food dye.

Look at that beautiful color, that beautiful thick maroon, perfect.
tmp_0189fcf9bf9402685bd1dca3ff6b5198_QrW9yE_html_m1eeabfbc.jpgNext, it’s time to add in the flour and the buttermilk. I’ve got 2 ¼ cups of plain flour. I’m just going to add in a small amount of the flour in at first, and stir that in.

tmp_0189fcf9bf9402685bd1dca3ff6b5198_QrW9yE_html_5a2f3089.jpgI’m just going to add in a small amount of the buttermilk in, and stir it in. now, if you can’t find buttermilk, you can use regular milk and add about a tablespoon of lemon juice or white vinegar, give it a good stir, and then leave it aside for about 5 minutes, and it will work just as well.
Continue to stir all the ingredients together, putting a little of each in at a time, stirring it in, and add the next, until all combined.
Here are two trays of whoopee pies ready to go into the oven.

Allow the whoopees to cool on the oven tray for about 5 -10 minutes before transferring them on a wire rack to cool completely.
