Introduction
I never thought that I would be the author of a cookbook. When I cook, I follow the recipe very closely. Cooking according to taste scared me. However, when my son developed allergies, I had very few good tasting recipes for him to eat. So, I rolled up my sleeves and worked on adapting recipes for him.
From September 2011 until February 2014, I had a goal to try one new Joseph-safe
recipe each week. Sometimes I tried recipes on the internet that were already gluten-free, dairy-free, and nut-free. Other times, I adapted things that looked good. I blogged about the results on my blog The Rice of Life (http://thericeoflife.wordpress.com).
Now, Joseph can tolerate gluten and most dairy, so I decided to close my blog to new posts. However, I wanted to compile the best recipes from those 2 ½ years into book form for anyone who found my blog useful. All the recipes here are free of gluten, dairy, and nuts (except coconut). Most are also free of soy, as in the first year, we believed Joseph was sensitive to soy as well.
In this book, I include the brands of foods that I used. I am not being compensated for doing so. I only wanted to make it easy for anybody to find ingredients and replicate what I created. Still, make sure all ingredients you use satisfy your own sensitivities.
Unfortunately, including color pictures in the printed version is cost prohibitive. To make up for that, I will provide an e-book edition, which has color pictures for every recipe, available for free to anyone who purchases the print copy. Just e-mail proof of purchase,
