Shrimp Spread
Reminiscent of the 60s, shrimp cocktail is the kind of appetizer you never get tired of tasting. In this fun variation, it becomes a creamy spread to serve on crackers or sliced bread.

START TO FINISH: 15 MIN. • MAKES: 20 SERVINGS
1 package (8 ounces) reduced-fat cream cheese
¹/2 cup reduced-fat sour cream
¹/4 cup reduced-fat mayonnaise
1 cup seafood cocktail sauce
2 cups (8 ounces) shredded part-skim mozzarella cheese
1 can (6 ounces) small shrimp, rinsed and drained
3 green onions, sliced
1 medium tomato, finely chopped
Sliced Italian bread or assorted crackers
1. In a small bowl, beat the cream cheese, sour cream and mayonnaise until smooth. Spread onto a 12-in. round serving plate; top with seafood sauce. Sprinkle with cheese, shrimp, onions and tomato.
2. Chill until serving. Serve with bread or crackers.
Bacon-Wrapped Appetizers
Water chestnuts lend a wonderful and unexpected crunch to the classic snack, while the pineapple’s sweetness is perfect with sweet-and-sour sauce. The appetizer is always a hit at birthdays and Christmas.

PREP: 25 MIN. • BAKE: 25 MIN. • MAKES: ABOUT 2 ¹/2 DOZEN
1 pound sliced bacon
1 can (8 ounces) whole water chestnuts, drained
1 can (8 ounces) unsweetened pineapple chunks, drained
1 jar (10 ounces) sweet-and-sour sauce
1. Cut each slice of bacon in half widthwise. Wrap a strip around each chestnut or pineapple chunk; secure with toothpicks. Place in an ungreased 15-in. x 10-in. x 1-in. baking pan. Bake at 400° for 25-35 minutes or until bacon is crisp.
2. Pour sweet-and-sour sauce into a microwave-safe bowl. Cover and microwave on high for 1-2 minutes or until heated through. Serve with appetizers.
Mini Chicken Empanadas
Refrigerated pie pastry makes quick work of assembling these bite-size appetizers that are loaded with chicken and cheese. I’ve made them several times since receiving the recipe from a friend.

PREP: 30 MIN. • BAKE: 15 MIN./BATCH • MAKES: ABOUT 2 ¹/2 DOZEN
1 cup finely chopped cooked chicken
²/3 cup shredded Colby-Monterey Jack cheese
3 tablespoons cream cheese, softened
4 teaspoons chopped sweet red pepper
2 teaspoons chopped seeded jalapeno pepper
1 teaspoon ground cumin
¹/2 teaspoon salt
¹/8 teaspoon pepper
1 package (14.1 ounces) refrigerated pie pastry
1. In a small bowl, combine the first eight ingredients. On a lightly floured surface, roll each pastry sheet into a 15-in. circle. Cut with a floured 3-in. round biscuit cutter.
2. Place about 1 teaspoon filling on one half of each circle. Moisten pastry edges with water. Fold pastry over filling. Press edges with a fork to seal.
3. Transfer to greased baking sheets. Bake at 400° for 12-15 minutes or until golden brown. Remove to wire racks. Serve warm.
NOTE Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.
Warm Cider
This recipe came from a friend in Fort Wayne, IN, where we lived for many years. The cider is warm, wonderful and nonalcoholic, so we’ve even served it at church. It’s also perfect for a holiday open house.

START TO FINISH: 30 MIN. • MAKES: 10-12 SERVINGS (2 ¹/2 QUARTS)
2 quarts apple cider
1 ¹/2 cups orange juice
³/4 cup pineapple juice
1 tablespoon brown sugar
¹/2 teaspoon lemon juice
2 cinnamon sticks (3 inches)
Dash ground cinnamon
Dash ground cloves
In a large saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes. Discard cinnamon sticks. Serve hot in mugs.
Spice Surplus
Cinnamon sticks can last for 2-3 years if stored in an airtight container in a cool and dry place. But what can you do with extras? Use them as stirrers for hot chocolate and cider; tie them to food gifts; or cook them with rice.

Mozzarella Sticks
Crunchy on the outside with gooey, melted cheese on the inside . . . this favorite appetizer is unbelievably easy to make. Even the kids can help wrap the string cheese.

START TO FINISH: 20 MIN. • MAKES: 1 DOZEN
12 pieces string cheese
12 egg roll wrappers
Oil for deep-fat frying
Marinara or spaghetti sauce
1. Place a piece of string cheese near the bottom corner of one egg roll wrapper (keep remaining wrappers covered with a damp paper towel until ready to use). Fold bottom corner over cheese. Roll up halfway; fold sides toward center over cheese. Moisten remaining corner with water; roll up tightly to seal. Repeat with remaining wrappers and cheese.
2. In an electric skillet, heat ¹/2 in. of oil to 375°.Fry sticks, a few at a time, for 30-60 seconds on each side or until golden brown. Drain on paper towels. Serve with marinara sauce.
Easy Antipasto Kabobs
I found a marinade recipe that wasn’t very heavy on oil and I modified it to suit my taste. But what I love about these kabobs is that they are easy to put together and there is no need to turn on the oven.

1 cup refrigerated cheese tortellini
¹/2 cup balsamic vinegar
¹/4 cup grated Parmesan cheese
¹/4 cup minced fresh basil
2 tablespoons Dijon mustard
1 tablespoon olive oil
2 teaspoons honey
¹/4 teaspoon pepper
1 can (14 ounces) water-packed artichoke hearts, rinsed and drained
1 large green pepper, cut into 1-inch pieces
1 cup grape tomatoes
1 cup pitted ripe olives
¹/4 pound thinly sliced deli ham, cut into 1-inch strips
12 wooden skewers (6 inches)
1. Cook tortellini according to package directions.
2. Meanwhile, in a large resealable plastic bag, combine the vinegar, cheese, basil, mustard, oil, honey and pepper. Add the artichokes, green pepper, tomatoes, olives and ham. Drain and rinse tortellini in cold water; add to bag. Seal bag and turn to coat. Refrigerate for 4 hours or overnight.
3. Drain and discard marinade. For each kabob, thread tortellini, artichokes, green pepper, tomatoes, olives and folded ham onto a skewer.

Sausage Sliders with Cran-Apple Slaw
The best things come in small packages, as these tasty sliders prove. The filling is so good, you’ll want to have a fork on hand for any yummy tidbits that get away.

START TO FINISH: 25 MIN. • MAKES: 4 SERVINGS
²/3 cup coleslaw mix or shredded cabbage
¹/3 cup chopped apple
3 tablespoons dried cranberries
3 tablespoons chopped pecans, toasted
4 teaspoons mayonnaise
4 teaspoons barbecue sauce
SLIDERS
1 pound bulk pork sausage
4 slices sharp cheddar cheese, halved
8 dinner rolls, halved and toasted
3 tablespoons spicy brown mustard
8 lettuce leaves
1. In a large bowl, combine the first six ingredients. Chill until serving.
2. Shape sausage into eight patties. In a large skillet, cook patties over medium heat for 3-4 minutes on each side or until a meat thermometer reads 160° and juices run clear, adding cheese slices during the last 1-2 minutes of cooking time.
3. Spread rolls with mustard; top each with a sausage patty, lettuce and 2 tablespoons coleslaw mixture. Replace roll tops.
Iced Coffee Latte
This is a great alternative to regular hot coffee and is much more economical than store-bought coffee drinks. Sweetened condensed milk and a hint of chocolate give it a special touch.

¹/2 cup instant coffee granules
¹/2 cup boiling water
4 cups chocolate milk
2 cups cold water
1 can (14 ounces) sweetened condensed milk
Ice cubes
In a large bowl, dissolve coffee in boiling water. Stir in the chocolate milk, cold water and condensed milk. Serve over ice.
Mini Muffuletta
Mediterranean meets comfort food when French rolls are slathered with olive spread and stuffed with layers of salami and cheese. You can make these muffulettas the night before and cut them into appetizer-size slices just before serving.

1 jar (10 ounces) pimiento-stuffed olives, drained and chopped
2 cans (4 ¹/4 ounces each) chopped ripe olives
2 tablespoons balsamic vinegar
1 tablespoon red wine vinegar
1 tablespoon olive oil
3 garlic cloves, minced
1 teaspoon dried basil
1 teaspoon dried oregano
6 French rolls, split
¹/2 pound thinly sliced hard salami
¹/4 pound sliced provolone cheese
¹/2 pound thinly sliced cotto salami
¹/4 pound sliced part-skim mozzarella cheese
1. In a large bowl, combine the first eight ingredients; set aside. Hollow out tops and bottoms of rolls, leaving ³/4-in. shells (discard removed bread or save for another use).
2. Spread olive mixture over tops and bottoms of rolls. On roll bottoms, layer with hard salami, provolone cheese, cotto salami and mozzarella cheese. Replace tops.
3. Wrap tightly in plastic wrap. Refrigerate overnight. Cut each into six wedges; secure with toothpicks.
Easy Three-Cheese Pesto Pizza
Using a ready-made crust, pizza can be on a serving tray in half an hour. This triple-cheese version is meatless and makes a hearty appetizer for casual gatherings.

¹/2 cup finely chopped red onion
¹/2 cup finely chopped sweet red pepper
1 tablespoon olive oil
1 prebaked 12-inch pizza crust
¹/2 cup prepared pesto
1 cup (4 ounces) crumbled feta cheese
1 cup (4 ounces) shredded part-skim mozzarella cheese
1 cup (4 ounces) shredded Parmesan cheese
1 can (4 ¹/4 ounces) chopped ripe olives
1 medium tomato, thinly sliced
1. In a small skillet, saute onion and red pepper in oil until tender. Remove from the heat; set aside.
2. Place crust on an ungreased 14-in. pizza pan. Spread pesto to within ¹/2 in. of edges. Layer with cheeses, onion mixture, olives and tomato.
3. Bake at 400° for 15-18 minutes or until cheese is melted.
Aussie Sausage Rolls
I was born and raised in Australia, but moved to the U.S. when I married my husband. When I long for a taste of my homeland, I bake up a batch of these sausage rolls and share them with neighbors or co-workers.

1 ¹/4 pounds bulk pork sausage
1 medium onion, finely chopped
2 teaspoons minced chives
2 teaspoons minced fresh basil or ¹/2 teaspoon dried basil
2 garlic cloves, minced
1 teaspoon paprika, divided
¹/2 teaspoon salt
¹/4 teaspoon pepper
1 package (17.3 ounces) frozen puff pastry, thawed
1. In a large bowl, combine the sausage, onion, chives, basil, garlic, ³/4 teaspoon paprika, salt and pepper. Unfold pastry onto a lightly floured surface. Roll each pastry sheet into an 11-in. x 10 ¹/2-in. rectangle. Cut widthwise into 3 ¹/2-in. strips.
2. Spread ¹/2 cup of sausage mixture down the center of each strip. Fold pastry over and press edges together to seal. Cut each roll into six pieces.
3. Place seam side down on a rack in a shallow baking pan. Sprinkle with remaining paprika. Bake at 350° for 20-25 minutes or until golden brown.
Sausage-Stuffed Jalapenos
If you like foods that have a little kick, you’ll love these zippy, cheese-and-sausage-filled jalapenos. The recipe is one of my favorites for parties.

1 pound bulk pork sausage
1 package (8 ounces) cream cheese, softened
1 cup (4 ounces) shredded Parmesan cheese
22 large jalapeno peppers, halved lengthwise and seeded
Ranch salad dressing, optional
1. In a large skillet, cook the sausage over medium heat until no longer pink; drain. In a small bowl, combine the cream cheese and Parmesan cheese; fold in sausage.
2. Spoon about 1 tablespoonful into each jalapeno half. Place in two ungreased 13-in. x 9-in. baking dishes. Bake, uncovered, at 425° for 15-20 minutes or until filling is lightly browned and bubbly. Serve with ranch dressing if desired.
NOTE Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.
Party Time Mini Cheeseburgers
Party-goers will love the fun of mini burgers. Juiced up with pickle relish and topped with cheese, these sliders will disappear in no time. You can even serve them with different shapes of cheese cutouts for holidays and themed events.

1. In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into 10 patties. Broil 3-4 in. from the heat for 4-6 minutes on each side or until a meat thermometer reads 160° and juices run clear.
2. Meanwhile, using a 1-in. pumpkin-shaped cookie cutter, cut out 10 pumpkin shapes from cheese slices or cut slices into thirds. Immediately place on burgers; serve on rolls.
Orange Julius
Orange Julius makes a refreshing drink year-round, but it also is a fun beverage to serve around the holidays. It’s a tasty alternative to soft drinks, too.

1 can (6 ounces) frozen orange juice concentrate, thawed
1 cup milk
1 cup water
¹/4 cup sugar
1 teaspoon vanilla extract

In a blender, combine the orange juice, milk, water, sugar and vanilla. Cover and blend until smooth. With blender running, add ice cubes, one at a time, through the opening in lid. Blend until smooth. Serve immediately.

This tasted just like the ones I used to get at the mall! I doubled the amount of ice, used the orange juice concentrate in its frozen state and used fat-free milk and Stevia instead of sugar.

2 loaves (1 pound each) frozen bread dough, thawed
¹/4 pound sliced ham

1 jar (14 ounces) pizza sauce, divided
¹/4 pound sliced mozzarella cheese
¹/4 pound sliced bologna
¹/4 pound sliced hard salami
¹/4 pound sliced Swiss cheese
1 teaspoon dried basil
1 teaspoon dried oregano
¹/4 teaspoon garlic powder
¹/4 teaspoon pepper
2 tablespoons butter, melted
1. Let dough rise in a warm place until doubled. Punch down. Roll loaves together into one 15x12-in. rectangle.
2. Layer ham and pepperoni on half of the dough (lengthwise). Sprinkle with onion and green pepper. Top with ¹/4 cup of pizza sauce. Layer mozzarella, bologna, salami and Swiss cheese over sauce. Sprinkle with basil, oregano, garlic powder and pepper. Spread another ¹/4 cup of pizza sauce on top. Fold plain half of dough over filling and seal edges well. Place on a greased 15x10x1-in. baking pan.
3. Bake at 375° for 30-35 minutes or until golden brown. Brush with melted butter. Heat the remaining pizza sauce and serve with sliced stromboli.

Hot Bacon Cheese Spread
This creamy spread, made with Monterey Jack and Parmesan cheeses, is sure to warm up your next party. Guests never wander too far from the table when I put this out.

1 unsliced round loaf (1 pound) Italian bread
2 cups (8 ounces) shredded Monterey Jack cheese

1 garlic clove, minced
1. Cut top fourth off loaf of bread; carefully hollow out bottom, leaving a 1-in. shell. Cube removed bread and set aside. Combine the remaining ingredients; spoon into bread bowl. Replace top. Place on an ungreased baking sheet.
2. Bake at 350° for 1 hour or until heated through. Serve with reserved bread cubes.

Mini Corn Dogs
Summertime means county fairs and corn dogs! I make my own by wrapping cornmeal dough around mini hot dogs. Kids and the young at heart love them.

¹/3 cup cornmeal
3 teaspoons baking powder

1 egg
³/4 cup 2% milk
24 miniature hot dogs
HONEY MUSTARD SAUCE
¹/3 cup honey
¹/3 cup prepared mustard
1 tablespoon molasses
1. In a large bowl, combine the first four ingredients. Cut in butter and shortening until mixture resembles coarse crumbs. Beat egg and milk; stir into dry ingredients until a soft dough forms.
2. Turn onto a lightly floured surface; knead 6-8 times or until smooth. Roll out to ¹/4-in. thickness. Cut with a 2 ¹/4-in. biscuit cutter. Fold each dough circle over a hot dog and press edges to seal (dough will be sticky). Place on greased baking sheets.
3. Bake at 450° for 10-12 minutes or until golden brown. In a small bowl, combine the sauce ingredients. Serve with corn dogs.
Guacamole
Lemon or lime juice will keep the dip looking fresh and prevent discoloration until serving. Or, before chilling, you can place plastic wrap directly on the dip and lightly press so there isn’t any air between the dip and the wrap.

Banana Split Shakes
These velvety smooth shakes make a special treat. They taste like an ice cream sundae, but you can sip them with a straw.

Sweet ’n’ Tangy Chicken Wings
Here’s a festive recipe that’s perfect for parties. Put the wings in before you prepare for the party, and in a few hours, you’ll have wonderful appetizers.

3 pounds chicken wingettes (about 30)
¹/2 teaspoon salt, divided
Dash pepper

¹/4 cup packed brown sugar
¹/4 cup red wine vinegar
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon minced garlic
1 teaspoon liquid smoke, optional
Sesame seeds, optional
1. Sprinkle chicken wings with a dash of salt and pepper. Broil 4-6 in. from the heat for 5-10 minutes on each side or until golden brown. Transfer to a greased 5-qt. slow cooker.
2. Combine the ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, garlic, optional liquid smoke and remaining salt; pour over wings. Toss to coat.
3. Cover and cook on low for 3 ¹/4 to 3 ³/4 hours or until chicken juices run clear. Sprinkle with sesame seeds if desired.

According to the National Chicken Council, wings became popular in the 1980s when consumers started eating boneless breast meat. Wings were the inexpensive byproduct.
Caramel Pretzel Sticks
Homemade caramel, smooth candy coating and chopped nuts make these pretzel rods sinfully delicious. When you carry these pretzels into a party, you will barely have time to place them on the table before they are snatched up.

2 cups sugar
1 cup light corn syrup
1 cup butter, cubed
1 can (14 ounces) sweetened condensed milk
1 package (10 ounces) pretzel rods
6 to 12 ounces white candy coating
6 to 12 ounces milk chocolate candy coating
³/4 cup finely chopped walnuts, optional
1. In a large heavy saucepan, combine the sugar, corn syrup and butter. Bring just to a boil over medium heat, stirring constantly. Continue boiling, without stirring, at a moderate-steady rate for 4 minutes. Remove from the heat; stir in milk. Return to the heat. Reduce to medium-low; cook and stir until a candy thermometer reads 245° (firm-ball stage). Keep warm.
2. Pour 2 cups caramel mixture into a 2-cup glass measuring cup. Quickly dip each pretzel halfway into caramel. Allow excess to drip off. Place on well-buttered baking sheets; let stand until hardened.
3. In a microwave, melt white candy coating; stir until smooth. Dip half of the caramel-coated pretzels into coating. Melt milk chocolate coating; dip remaining pretzels. Drizzle white-coated pretzels with milk chocolate coating; drizzle milk chocolate-coated pretzels with white coating. Sprinkle with walnuts if desired. Store in an airtight container.
EDITOR’S NOTE We recommend that you test your candy thermometer before each use by bringing water to a boil; the thermometer should read 212°. Adjust your recipe temperature up or down based on your test. Any remaining caramel mixture may be poured into a well-buttered 8x4x2-in. loaf pan. Cool to room temperature before cutting into squares and wrapping in waxed paper.

Pepperoni Pinwheels
These golden brown pinwheels have lots of pepperoni flavor and are easy to make. This is the kind of recipe that makes entertaining simple and delicious.

1. In a small bowl, combine the pepperoni, cheese, oregano and egg yolk. In another small bowl, whisk egg white until foamy; set aside. Separate crescent dough into four rectangles; seal perforations.
2. Spread pepperoni mixture over each rectangle to within ¹/4 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seams to seal. Cut each into six slices.
3. Place cut side down on greased baking sheets; brush tops with egg white. Bake at 375° for 12-15 minutes or until golden brown. Serve warm. Refrigerate leftovers.

Beefy Taco Dip
Here’s a taco dip that is a combination of several of my friends’ recipes. I experimented until I came up with my favorite. It’s always a hit, no matter where I take it!

1 package (8 ounces) cream cheese, softened
1 cup (8 ounces) sour cream
³/4 cup mayonnaise
1 pound ground beef
1 envelope taco seasoning
1 can (8 ounces) tomato sauce
2 cups (8 ounces) shredded cheddar or Mexican cheese blend
4 cups shredded lettuce
2 medium tomatoes, diced
1 small onion, diced
1 medium green pepper, diced
Tortilla chips
1. In a small bowl, beat the cream cheese, sour cream and mayonnaise until smooth. Spread on a 12 – to 14-in. pizza pan or serving dish. Refrigerate for 1 hour.
2. In a saucepan over medium heat, brown beef; drain. Add taco seasoning and tomato sauce; cook and stir for 5 minutes. Cool completely. Spread over cream cheese layer. Refrigerate.
3. Just before serving, sprinkle with cheese, lettuce, tomatoes, onion and green pepper. Serve with chips.
Meatless Dip
For those who don’t like ground meat, I use refried beans with a packet of taco seasoning to add to the bottom layer. Can’t go wrong.

You can’t go wrong with this recipe. It looks fantastic and people just flock to it! It’s great with pasta, too. It’s cheesy, buttery and finger-lickin’ good; no one can resist pulling off a piece of this bread.

1 pound Monterey Jack cheese, thinly sliced
1. In a small bowl, combine the first six ingredients; set aside. Cut bread diagonally into 1-in. slices to within ¹/2 in. of bottom of loaf. Repeat cuts in opposite direction. Arrange cheese slices in cuts. Drizzle butter mixture over bread.
2. Wrap loaf in foil; place on a baking sheet. Bake at 350° for 15 minutes. Uncover; bake 10 minutes longer or until cheese is melted.
