    Chapter One:  Breakfast and Brunch Casseroles

    Everyone likes a great, but easy casserole to serve the family and company.  These recipes are super easy and quick.  With a few minutes of preparation time, you put these casseroles in the oven and have time to do something other than cooking.

    In this chapter, you will learn:

    Simple, quick recipes to make breakfast or brunch casseroles.

    Blackberry French Toast

    This simple brunch or breakfast dish will serve 8 to 10 people.  It is so easy to prepare, this recipe will be your favorite for family gatherings.

    Ingredients:

    A loaf of French bread cut into 1" cubes

    1 8-ounce reduced fat cream cheese sliced into 1" cubes

    4 eggs slightly beaten

    1 cup blackberry jam (can be sugar-free if you wish)

    2 cups of half and half

    ½ cup dark brown sugar, tightly packed (can use brown sugar substitute)

    1 tsp cinnamon, ground

    1 tsp vanilla flavoring

    Maple syrup or powdered sugar, as desired

    Directions:

    Heat blackberry jam on medium heat for 1 to 2 minutes.  When the jam melts, stir it briefly.

    Lightly grease a 13 x 9 baking dish.

    Cover the bottom of the dish with half of the bread cubes.

    Scatter the cream cheese cubes and drizzle the jam over the bread and cheese.

    Add the remaining bread cubes.

    Mix the eggs, half and half, cinnamon, and vanilla flavoring in a bowl.

    Spoon the egg mixture over the bread. 

    Sprinkle the brown sugar evenly over the casserole.

    Cover with aluminum foil and refrigerate for at least 8 hours.  Can be kept in the refrigerator overnight.

    The next morning, preheat the oven to 325 degrees.

    Remove from the refrigerator and bake for 20 minutes.

    Remove the foil and bake for another 10 to 15 minutes.

    The casserole is done when it is lightly browned and the egg mixture has set.

    Serve with maple syrup and powdered sugar as desired.

    Breakfast Lasagna

    These tasty layers of pasta, eggs and sausage give an interesting twist to a family favorite.  This recipe serves 8.
