    Introduction

    To many, the meal served on Thanksgiving is said to be the most popular shared meal of the year. Not only does this gathering bring together family and friends, it also provides an opportunity to recognize and give thanks for all that we have. From the first Thanksgiving Feast in 1621 shared between the Native Americans and the colonists, many food items have survived as standard fare. Although few records exist about that first menu, various accounts speak of corn, turkey, duck, squash, beans, wild game and pumpkins. Most of the food used that first Thanksgiving was developed by the Native Americans who trained the colonists about those items native to the New World.

    Here are a few sample menus from historical records that show how traditional our favorite Thanksgiving dishes are:

      1779: Haunch of Venison, Chine of Pork, Roast Turkey, Pigeon Pasties, Roast Goose, Creamed Onions, Cauliflower, Squash, Potatoes, Raw Celery, Mincemeat Pie, Pumpkin Pie, Apple Pie, Indian Pudding and Cider.

      1817: Roasted Goose, Stuffed Turkey, Braised Beef, Potatoes, Turnips, Beets, Apple Pie, Pumpkin Pie and Cranberry Sauce.

      1877: Turkey with apple stuffing, Oyster Stew, Stuffed ham, Macaroni and Cheese, Creamy Slaw, Fruit Platters, Apple Pie, Pumpkin Custard and Ginger Cakes.

      1939: Oyster Bisque, Roast Turkey with Sausage Stuffing, Cranberry Sauce, Mashed Potatoes, Baked Winter Squash, Grapefruit and Pear Salad, Pumpkin Pie, Apple Pie, Pound Cake and Coffee.

      1959: Roast Turkey, Hot Tomato Soup, Herbed Stuffing, Orange-glazed Sweet Potatoes, Buttered Green Beans, Apple Pie, Pumpkin Pie, Hot Biscuits and Coffee

      1991: Smoked Salmon with Mustard Sauce, Roast Turkey with Giblet Gravy, Steamed Pumpkin with Raisin Chutney, Rice with Red Bell Peppers, Green Beans and Mushrooms, Browned Onions, Rum Cakes, Apple and Pumpkin Pie, Cider and Coffee

      2003: Roast Turkey with Dressing, Baked Pineapple Ham, Garlic Mashed Potatoes, Roasted
