Maria Sokolovskaya
Maria Sokolovskaya was born in Moscow, Russia. Interestingly, she was born during the time that Socialism was very pronounced in Russia and she left as an adult when Socialism was collapsing. For 54 years, Maria witnessed the growth and fall of Socialism, as well as the communistic ideas for a better life. She received a graduate degree in economics. She worked in different areas of this field for 20 years before deciding to do something particularly useful for women. In 1980, she opened a school of Home Economics and named it ‘Aurora’ (the goddess of morning star). The school was very popular in Moscow where 750 women studied the fashion history, image enhancement, home decorating, cooking, skin care, and 12 native handcrafts of various Russian nationalities. The idea of this school was perfect for the special attention needed by hard working women who were tired, exhausted and lonely. By attending the school, they could see that someone cared about their personal enrichment. There was a cooking contest every month at the school. Students brought original dishes accompanied with their recipes. Maria collected the recipes for 8 years. She arranged a tour of ethnic cooking and shares her knowledge with you in this book. Maria published several books on handcrafts, fashion history, cooking, and an encyclopedia on macramé. She is the author of countless articles that address women's interests. Articles have been published in Russian magazines, 'Krestianka', 'Rabotnica', 'Family and School', and 'Romahka'. She published her own magazine called 'Maria' and has appeared on the television program called 'Moscvichka', which was telecast on a major Moscow network. When Maria immigrated to the United States, she decided to continue working with women. She graduated from the National Academy of Beauty Arts, Midwest Institute for Medical Assistants. She traveled to Paris, London, Vienna, Rome, Denver, and all over the United States to receive a decent education in image development and skin care. In 1994, Maria opened her new studio in St. Louis, Missouri, called 'Art of Appearance'. This facility was neither a beauty parlor nor a doctor's office. It was unique; something in between and nothing existed like it in the industry at that time until later in the century. Her motto was "Every woman is beautiful if she knows how". Maria studied at the College of Freelancing and published articles in the 'St. Louis Seasons Magazine,' ‘Uptown Magazine,’ and 'Progressive Woman Newspaper.’ She regularly publishes her own newsletter called 'Art of Appearance'. Dinner with Friends is dedicated to Maria's 54 years of life memories in Russia. She followed a desire to write this book because an inner voice urged her to make certain that everyone remembers the Union of Nations and know a little bit more about their cuisine. Each section of the book has a short introduction on the fundamental principles of cookery at origin. Important advances have been made in recent years in our knowledge of the art of cookery. This book does not include all the recipes, which can be used in homes of my friends who lived previously in Moscow. Its purpose is not to supplant, but only supplement some distinctive dishes of different nationalities, which can be tried at home. Maria has two children: Margaret, a Nurse Practitioner who has a daughter named Eva, Maria's joy and hope; and Aleks, a Doctor. Maria resides in Oswego New York along with her precious library. Maria believes that "to add a library to a home is to give that home a soul". She is in complete agreement with W. Somerset Maugham when he stated "It is a funny thing about life: if you refuse to accept anything but the best, you very often get it.”

I dedicate this book to my brother, Efim Shteinberg, who lives in Moscow and to my family members who now live throughout the United States. Thank you for sharing my journey.
To Alexander - my son, who inspires and believes in my strength, which helped me survive the immigration crises. He always replied to my worries, Everything will be o’kay Mom.
To Margaret - my daughter, who has sometimes criticized my plans, my fantasies, and me? Every minute I have to prove to her that I am real.
To Eva - my granddaughter, who has an amazing growing mind, like a sponge, and who takes everything for granted. To be close to her is my joy and happiness.
To Ida - my first cousin, my second mother, my best friend. I cannot remember any event or life matter when she did not help me.
To Bella - an incredible cook. She is there for anyone who needs help.

206913_Dinner_with_Friends_Image_3.tifINTRODUCTION
This book is a byproduct of patience and great imagination. Putting it all together has been a real adventure. My preparations for this book included talking to dozens of women from different nationalities. All recipes are original. I will also share tips on how to care for the skin with products from the refrigerator and kitchen pantry. The original recipes will enrich your cooking menu and enhance your reputation as a superb hostess. The ingredients used in the recipes are readily available in supermarkets. No special cooking equipment is needed. Recipe results may vary though depending upon the quality of ingredient used. You don’t have to travel to Russia to learn a new cuisine. I offer you a priceless opportunity to try it now in the comfort of your home with your loving family. Making your own menus from the recipes in this book is very creative. Besides, it is fun! So, pick a recipe. Give it a try and enjoy!
A big question might be to ask how ethnic food becomes ethnic. It is the result of an intricate mélange of historical circumstances, regional customs and taste. These tastes are instantly recognizable and persist throughout the centuries by transforming recipes into symbols: like ‘pilov’, ‘borsch’, ‘shashlik’, and ‘picca’. The main part of this book is the authentic recipes that are the outcome of this blend of history, customs, taste and symbols. This book is much more than a detailed exploration of Eastern European and Asian cookery. These recipes reflect the breadth of different nationalities, different countries, and different cultures. Certain names of recipes appear again and again. This happens because nations of one religion or neighbors have similar food and customs. For example: potato and fish dishes in the Baltic States, soups in the Slovenia countries, and pilov in Asia.
This book will help you to realize and understand the centuries-old tradition of human relations. For example, it is a Russian tradition that during a dinner party that the hostess urges her guests to eat. She sees to it that their plates are full. The phrase, Eat, my dear guests
should be constantly heard. There is even a joke on this subject: A couple comes home from a dinner party and the wife asks the husband whether he enjoyed his meal. The husband says that the dinner was fine, but there was not enough encouragement to eat. The hostess’s duty is not only to urge her company to eat, but to drink (vodka and wine) as well. If a new bottle of vodka is not put on the table, it means the party is over - time to go home.
This book consists of five chapters. The first chapter deals with table settings. The second chapter is about etiquette and the language of flowers. The third chapter tells you about the most famous drink in the world - the Tea. Chapter four is a surprise: you will be taught about cosmetics from your kitchen! The final chapter invites you to an exclusive journey of native East European and Asian cuisine. Food-lovers will find new, original recipes; hostesses will be able to vary their menus. Readers will learn the customs and traditions of entertaining on the other continent.

TABLE SETTING
There is a definite sequence. First, we center the china dinner plates at each place setting. On the left side we place two forks: a small fork and a dinner fork with the prongs up. On the right side of the dinner plate, we place two knives: a table knife and an appetizer knife. The edges of the knives must face the plate. If a hot fish course is served, we also add a third fork on the left side for fish, and a fish knife
