I was born in Kentucky. I retired from the nursing field. I needed to fill the void in my life, so I started baking. I began baking at age nine; I pushed a chair up by Mom and watched her. She was a great cook and baker; she taught me all about baking. Then she enrolled in four-to-four class and then, in high school, home economics 1 and 2. My instructors were wonderful. I entered the chocolate cake in the county fair, and it took first place. Prize was $15 cash and 10 lb. of flour and, of course, the ribbon. My name was in the local paper for honorable mention. This was all the encouragement I needed to continue baking.

    Soups

    Vegetable Soup

    5-6 of each potatoes, carrots, diced and cooked

    1 head of cabbage chopped

    1 pkg fresh or frozen vegetables

    1 can tomatoes

    1 large can tomato juice

    1 1/2 Ib pkg stew meat, browned

    1 envelope onion soup mix

    1 pkg vegetable soup starter

    Cook together vegetable soup starter, onion, potatoes, onion soup mix.

    Add the rest of ingredients and simmer for an additional 20 minutes.

    **** I use cans of peas, corn, green beans and tomatoes, limas and carrots.

    This is Yummy

    Potato Soup

    5 lbs potatoes, diced                     5-6 carrots, diced

    1-2 med onions, diced                 1 envelop onion soup mix

    Potato soup starter                       2 c diced ham

    2-3 c milk                                    2 Tbsp  fkour

    2-3 Tbsp melted butter

    Cook potatoes, onions, carrots in enough water to cover vegetables. Cook til tender.

    Mix flour with melted butter, Add to potatoes. Add  onion soup mix and potato soup starter.

    Then add ham and milk. Simmer 20 minutes. This is very good.

    Chili

    2-3 lbs ground beef                1  med onion diced                  chili mix

    chili beans  1 can                    1 lb macaroni, cooked             onion soup mix

    1 lge can tomatoes                 1 can tomato juice

    Brown grown beef with onions and drain.  Add macaroni, chili mix, and onions soup mix.

    Add tomatoes and juice.  Simmer 15-20 minutes

    Salads

    Banana Salad

    5 sliced bananas                       1-2 Tbsps mayo

    1 c peanuts                               1/2 c peanut butter (optional)

    lemon juice over bananas

    Mix together and chill

    Cabbage Slaw

    1    4oz can crushed pineapple                    2 c mini marshmallows

    1 med  head cabbage (shredded)                 1/2 c mayo

    1 sm jar maraschino cherries (chop)

    Drain pineapple- save 1/4 c juice. Combine pineapple , cabbage and mayo and juice. Mix in chopped cherries.

    Chill 1 hr      6-8 servings

    Dressing for Cabbage Salad

    1/2 c sugar      1/4 c vinegar     2 egg yolks

    1/4 cbutter             1 1/2 c boiling water

    Mix sugar & flour with vinegar and egg yolks and salt and
