A graduate of Western Culinary Institute, in Portland OR, Dante returned home to Arizona to expand his culinary knowledge and career. Starting at the Elegant Sassi Restaurant in North Scottsdale, where he was apart of the culinary team that helped achieve the restaurant’s first AAA 4 Diamond Award.  Taking his knowledge of “scratch” traditional Italian cuisine, he headed to the 5 Diamond, 5 Star Phoenician Resort in Scottsdale, Arizona. Working in all areas of culinary, he finished his stint there in the 4 Diamond Il Terrazzo Restaurant. After the Phoenician, he continued to grow his career in management roles at the Fairmont Princess Resort, the Westin Kierland Resort, Compass USA, and a return to the Phoenician Resort in 2019 to help open the Phoenicna Tavern.

    Introduction

    For me cooking has always been my escape. A few hours, a few minutes, however long the recipe takes I get to zone own out and really connect with myself. Carefully selecting my ingredients and putting them together to create a memorable experience for myself and others. I've always enjoyed the arts; music, painting, drawing, photography, and for me this is my art and my expression to the world. As I've continued to grow as a chef I been approached more not as a cook, but as a teacher and mentor. Friends, families, and strangers want to know about techniques, flavor profiles, and recommendations. And just like that, my escape has become a group gathering. But I embrace the change. Cooking is about bringing people together, sharing, celebrating, and reflecting. To pass the time during uncertain times, I cook and create new recipes and share my pictures with the world. I decided with my extra time to really lock down a few of my favorite recipes and share my passion with others. I started my career off with scratch cooking, and most of these recipes are just that, but they are flexible enough for you to take and leave what you want and put your own special twists on my ideas. A lot of the recipes also cross utilize ingredients for convenience.
