Asparagus Ribbon Salad with Shallots and Fried Eggs

This salad is a great lunch to enjoy over the weekend or when you are looking for a more substantial but healthy option.

Cooking Time: 12mins

Total Time: 20mins


8 stalks green asparagus (trimmed)

1 tbsp. olive oil (divided)

1 shallot (thinly sliced crosswise)

⅛ tsp sea salt

Black pepper

1 large beefsteak tomato (cut into ¼ "cubes)

2 cups arugula

½ ounce feta cheese (crumbled)

Juice of 1 lemon

1 tbsp. parsley (chopped)

2 large, organic eggs


1. Beginning from the root, shave the asparagus stalks into fine ribbons; you can do this with a vegetable peeler. Ideally, you should achieve no less than 1 cup.

2. In a large size frying pan or skillet, heat 2 tsp of olive oil and over moderate to high heat. When the oil is sufficiently hot, add the shallots, cooking for 60 seconds, until slightly softened.

3. Add the asparagus ribbons and season well with salt and pepper, cook for 2-3 minutes, while occasionally tossing until the ribbons are al dente.

4. Transfer the mixture to a large mixing bowl and add the cubes of tomatoes, arugula, feta cheese, fresh lemon juice and chopped parsley, toss well to combine.
