Strawberry and lemon thyme scones
TAKES 30 mins SERVES 6
INGREDIENTS • 250g self-raising flour • ½ tsp baking powder • 50g butter, cubed and chilled • 25g caster sugar, plus extra for sprinkling • 150ml milk • 7g freeze-dried strawberries or 75g freshly chopped strawberries • Few sprigs lemon thyme, leaves picked • 1 egg, beaten • Strawberry jam and cream, to serve
1 Preheat the oven to 220C/Gas 7. Rub together the flour, baking powder and butter until you have a breadcrumb-like consistency.
