INSTANT MISO SOUP

Serves 1 Preparation time 20-25 minutes

“Enjoy a home-made instant miso soup on the go. This lunch-pot recipe will become a firm favourite whether working from home or the office.”

INGREDIENTS

• 1 tbsp fresh chives, finely snipped• 50g/2oz silken organic tofu, cut into 1cm/½in cubes• 1 tsp dried wakame seaweed• 50g/2oz baby spinach, or kale, chopped, if preferred• 1 tbsp dashi powder• ½-1 tbsp miso• Handful of roasted white sesame seeds• A dollop of Japanese 7 spice mix • Broccoli florets, steamed, and a handful of mangetout• 1 medium-boiled egg, shell removed, cut in half• Handful of• 200-250ml/7-9fl oz boiled water
