Caramel & Cinnamon Popcorn

Ingredients

For the caramel

125g Butter(unsalted)

½ tspSalt

2 tspCinnamon

230g Unrefined darkmuscovado

sugar

½ tsp Bicarbonate ofsoda

1 tsp Vanillaextract

For the popcorn

125g Popcorn (plain,Popped)

Place your popcorn in a bowland

keep aside.

Preheat your oven to 120°C (fan 110°C, gas mark1/2).

To make the caramel melt the butter in a large pan until itbegins

to bubble.

Add the salt, cinnamon andsugar stirring until the sugardissolves

and combines with the other ingredients.

Lower the heat and leave to bubble gently for no more than 5minutes.

Remove from the heat andthen quickly add the bicarbonate of soda and the vanillaextract.

Stir quickly until combinedand then pour over thepopcorn.

Mix together the popcornand caramel until evenlycoated.

Pour the popcorn on to a baking tray, spreading out with aspoon

and bake for 15-30 until crisp.

Serve.

Ingredients

1 Roll PuffPastry

200g LemonCurd

1 tbsp Silver Spoon IcingSugar

Unroll your puff pastry and usea flower cutter to createmini

flowers. Place these in a non-stick mini cupcake baking tin and prick with a fork several times. This will prevent the puff pastry from over- rising
