TIPS FOR BAKING CAKES AT HOME
I want you to get the best out of this book and produce cakes at home that come out great every time. In order to do that, there are a few important notes to bear in mind before starting:
NUTS & CARAMEL
Watching simple white sugar bubble up and caramelize into liquid gold is a thing of beauty. Swirl in a generous pinch of flaky sea salt, and you’ve got yourself the best sauce for dipping, drizzling or just eating straight from the jar. While plain caramel works well in most situations, there are so many possibilities to introduce new flavors. It could be a swirl of tahini in my Hazelnut & Tahini Caramel Cake or some unexpected fresh sage leaves in my Apple Cake with Sage Caramel.
Caramel can be tricky to get right and may take a couple of tries before you get the hang of it. But once you’ve mastered it, you’ll be able to whip up a quick batch of caramel sauce for your cakes in no time. Do be careful when heating the sugar for caramel; this process will require all of your attention, as it can burn quite quickly. And as mesmerizing as golden, bubbling sugar looks in the pan, the temperature will be significantly hotter than boiling water so don’t be tempted to stick your finger in the pan. I tell you this from experience! If you’re a little nervous, you could wear a pair of oven mitts to protect your hands from splashes of hot sugar.
One of caramel’s best partners is nuts. From pecans to hazelnuts, walnuts and almonds, quite a few of the cakes in this chapter combine both to create sweet-and-salty pairings that I know are loved by many. I bake with ground almonds quite a fair bit and love the texture that they bring as well as their moisture from the natural oils. The Almond & Amaretto Cake is a real delight—a double hit of almond flavor held together by a dense yolk-rich batter. The Peanut Butter Banana Bread is an updated classic made all the more beautiful with the sliced bananas laying on top. All the recipes here bring a comforting stickiness and nuttiness, and are incredibly scrumptious—sweet yet
