QUE RICO CUANDO MAMÁ
ESTABA EN LA COCINA! QUE BONITO SER CRIADO EN LAS

When I was a child I new when mom was in the kitchen.
My heart and my nose would smile,
Mom is in the kitchen using El Pilón preparing my meal.
She would look at me and smile,
while using El Pilón
adding bits of tender fresh garlic and herbs!
Mmm…how delicious it was when mom was in the kitchen.
How beautiful it is to be raised in Puerto Rican traditions.
Who new that a simple image like mom using El Pilón,
would remain forever engraved.
Who new that upon reflection,
my heart would fill my eyes with tears,
with memories of happiness and love,
I would say,
on that day, she not only prepared my meal,
but also
implanted the flag of (sabores y colores) flavors and colors
in my heart and in the hearts of our cultural rearing.
To my mom, Irma Aquilar Diaz, who taught me about the heritage and traditions of our rich Puerto Rican culture and cuisine.

Introduction
I was fortunate enough to be raised in the warmth of a family where I learned what family really means. I was an only child, so when extended family came over, it was such a delight. My father sometimes left our home early in the morning and returned with my grandparents, aunts, uncles, and cousins in tow within a few hours. He enjoyed having our family around him because it made Mom and me so happy. My cousins and I were all within a year or two of each other’s age. Very soon after our family gathered, I started to hear mashing in el pilón (mortar and pestle), and soon thereafter, the wonderful aromas of arroz con gandules (rice with pigeon peas), pernil (roast pork), habichuelas (stewed beans), tostones (fried plantains), and aguacate (slices of avocado) emanated from my mom’s kitchen. At these meals, my family members sat around the table and told stories. When I recall these childhood times, I can almost hear my parents laughing in the kitchen, telling stories while they cooked and listened to Puerto Rican country music of their generation and mashed herbs and spices in el pilón. I heard the women squeal with excitement when an old favorite tune played. The result of the wonderful aromas was delicious food. My family was all about cooking together and telling stories, and these moments created such cherished memories. Nostalgic stories developed from these gatherings, and some became legendary. As I grew into adulthood, other cherished memories and stories developed as I cooked with my daughter, my aunt, my cousins, my boyfriend, and other members of my family who are very close to my heart. The sudden notion to record these stories became the impetus for creating this book.
