Lobster Mac&Cheese

Ever since we introduced Newquay Harbour landed Lobster, macaroni cheese at the Headland Hotel, we have sold a couple or more of these dishes, every night. In the real spirit of Cornishness, we thought we will share our recipe with all of you, to practice at home. Although applicable to any other shell fish, this recipe works its magic with the sweet mellowness of Cornish lobster meat, married subtly with the nautical milkness of David stow Cheddar cheese. First buy a live lobster! Preparation time:15 Minutes Cooking time 15 minutes Relishing time.Forever All you need is, 1 1/2 pound Lobster, steamed for 8 minutes 50g pound of Cavatappi pasta 1 tablespoons of sea salt 50ml cups of milk 4 tablespoons of butter (divided) 25g cup of all-purpose flour 50g of White Cheddar, Grated 1/4 teaspoon of black pepper 1/4 teaspoon of sea salt 20g of fresh bread crumbs Steam the lobster for eight minutes, or boil it in a pot of rumbling salted water for 7-8 minutes. Remove the Lobster from the pan and allow it to cool down. Slit the lobster into half and discard the green veins, and intestines. Crack the Claw with a hammer and extract all the meat from it and tail of the lobster. Slice the lobster meat and keep aside.

Boiling a large pot of water - add 2 tablespoons of sea salt. When the water has reached boiling, add the pasta and cook for 6-7 minutes. For the cheese sauce, melt 3 tablespoons of butter on medium heat in heavy bottomed sauce pan. Add flour to the butter, stirring with a whisk. Stir and cook over medium low for 1 minute, until flour is cooked. Pour in milk, stirring until smooth. Cook over medium high heat for 5 minutes until the sauce has thickened. Remove the sauce from the heat. Add all of the grated cheese and stir until smooth. Add pasta into the cheese sauce and stir to coat. Add the lobster in and season with salt & pepper. Lay the hollowed out lobster shells, and top them up with the pasta and cheese sauce. Melt the remaining 1 tablespoon of butter in a small bowl, add breadcrumbs and toss with the butter. Crumble the breadcrumbs on top of the pasta. Grill the Lobster Mac &cheese for 1 -2 minutes until the breadcrumbs have browned. Enjoy the best of Cornish seafood, in every spoonful!
