Recipe for Idli /rice cake Ingredients:Urad Dhal- 1 cup Rice- 3 cups Methi seeds- 1 tbsp Preparatory method:

Soak all the 3 ingredients for an hour Clean and drain Grind urad dhal separately into fine batter Rice and methi separately into coarser batter Mix both the batter,adding salt Let the batter ferment overnight Then,spoon the batter in a rice cake mould plate and steam it in a rice cake steamer/steamer for 5mts in high flame and 2mts in slow flame Let the steamed rice cake be cooled by sprinking few drops of water Using a spatula/knife,take out the rice cake from the mould and is ready to be eaten Idli /rice cake is best served with Coconut/tomato/green chutney /Sambhaar-with a few drops of ghee in it. -----------------------------------------------------------------------------------------------------------------------------------------Dosa/pancake Ingredients:Urad Dhal- 1 cup Rice- 3 cups Methi seeds- 1 tbsp Preparatory method:

Soak all the 3 ingredients for an hour Clean and drain Grind urad dhal separately into fine batter Rice and methi separately into coarser batter Mix both the batter,adding salt Let the batter ferment for a day Method:Then spread the batter on a hot plate /tawa.Let the tawa be moderately hot.Grease the tawa with oil before spreading the batter.Cover it with a lid for a minute or two.Using a spatula,lift the dosa and turn it over ,to cook on the other side. Dosa is eaten with coconut chutney,tomato chutney,coriander chutney,and podi(a dry grind mixture of pulses and chilli)
