SAGE by ART IN THE AGE For the fourth Art in the Age libation ( along with ROOT, SNAP, AND RHUBARB TEA), they sought to create a refreshing garden gin using some of the esculent botanicals chronicled by McMahon in his publications and grown by Jefferson at his Monticello gardens. The result is delicious and fascinating, swirling with the grace and elegance of a post-colonial, pre-industrial America. With an intoxicating aroma and woodsy, herbaceous avor, SAGE mixes deliciously in both savory and sweet cocktails. Instilled with organic American botanicals including thyme, rosemary, lavender, fennel and, of course sage, it calls to mind an earlier, more verdant world, when nature was more abundant and adventures more frequent. Please join us in our revival of craft cocktails from simpler times. Ingredients: Angelica is a perennial herb with white starburst owers, widely used for its aromatic and medicinal qualities. Dandelions, petals

are blanched to remove their bitterness, and the roots can even be roasted to provide deep coffee avors. Fennel is an aromatic plant, sweeter than anise, providing a pleasant licorice note. Rosemary is an herb with highly aromatic needles and owers in various colors.The botanical name for Sage, Salvia, translates from Latin as to save or to heal. Ancient traditions and recipes dating back to the 5th century B.C. associated sage with immortality, and the praise for sage is not unfounded, it was commonly used as an herbal remedy, as well as a digestive aid and appetite stimulant. Sumac offers a lemony spice. Native tribes used sumac to tan leather, smoke with tobacco, and also valued sumac for its medicinal use as an astringent and antiseptic.Thyme has a pleasant aroma and sweet herbal avor, and the herb has historically been used as a preservative and aromatic in cheese, teas, soups and sauces. Thymol, the essential oil of the thyme plant has antiseptic qualities, and has also been utilized for headache relief and as a digestive aid.

Absinthe in the Raw


The spirit that originated for medicinal purpose is misunderstood
Absinthe was legalized in 2007, yet the controver sial spirit is still misunderstood. Thujone is a chemical found in a number of plants, including G r a n d Wo r m w o o d , ( A r t e m i s i a absinthium) and sage. Wormwood is a key ingredient in Absinthe, which was the scapegoat for the nearly 100 year ban on this spirit. Wormwood is a plant seen everywhere, from front yards to the food being consumed by various deer and other wildlife. Consuming a lot of Thujone as explained by Lance Winters, Master distiller from St. George Spirits, is just going to make you incredibly nauseous and sick. Color is the next topic thats interesting and is usually the difference between French vs. Swiss. All spirits come off a still clear. The color coming from products like St. George Absinthe are from an infusion after distillation with ingredients like lemon balm, hyssop, stinging nettles, meadow sweet, opal basil, ricola mint and artemesia pontica. Absinthe was made like moonshine after the ban in the early 1900s and the quality of the spirit was always questionable like its American partner in crime. To make this Absinthe more palatable, sugar was added and there started a sort of ritual which is still carried on to this day however unnecessary it may be. A great place to enjoy the tradition and places where this spirit was born is in the region along the border between Switzerland and France. Here, a 17-mile Absinthe Trail is very similar to the Bourbon Trail in Kentucky. La Clandestine ($61.68/750ml) and Kubler ($40.83/liter) are the two blanche absinthes that Youngs carries. They are both 106 proof, clear/louches to milky white, and are as easy going as the Swiss. La Clandestine is a little sweeter while Kubler has a touch more citrus on the palate. Claude-Alain, the master distiller of La Clandestine, is a 5-time winner of the Golden Spoon, the absinthe worlds most prestigious award.
