5 hours, plus resting Ingredients: - 800g Simply M&S pork belly - 400g rhubarb - 1 small Simply M&S garlic clove, finely chopped - 1 tsp grated root ginger - 2 tbsp Simply M&S pure honey - 1 tbsp red wine vinegar Method: 1. Heat the oven to 160C/325F/gas 3 (140C for fan ovens). Place the pork in a roast ing tin, rub seasoning into the scored fat and roast for 2.5 hours. Leave to res t for 10 minutes. 2. Meanwhile, trim the rhubarb and cut it into 5cm lengths. Arrange in a single layer in a shallow roasting tin. Scatter over the garlic and ginger, then drizzl e over the honey and vinegar. Season and cook for 30-40 minutes, until just tend er. Serve with the pork.
