Makes: approximately 35 Ingredients: - 150 g/5 oz plain flour, plus extra for dusting - 150 g/5 oz mature Cheddar

cheese, grated - 150 g/5 oz butter, diced, plus extra for greasing - 1 egg yolk - Sesame seeds, for sprinkling Method: 1. Place the flour and cheese in a bowl and mix together. Add the butter and rub it in with your fingertips until combined. Stir in the egg yolk and mix to form a dough. Wrap the dough in clingfilm and chill in the refrigerator for about 30 minutes. 2. Preheat the oven to 200C/400F/Gas Mark 6. Lightly grease several large baking s heets. Roll out the dough thinly on a lightly floured work surface. Cut out 6-cm /2-inch rounds with a biscuit cutter. Re-roll the trimmings to make about 35 roun ds and place them on the baking sheets. Sprinkle the sesame seeds over the top o f them. 3. Bake in the preheated oven for 10 minutes, or until the sables are light gold en brown. Transfer the cookies to a wire rack to cool slightly before serving.
