Serve each portion with 60g dried brown or white rice, cooked in boiling water, and a simple green

salad. Serves: 4 Ready in: 1 hour Ingredients: - 500g pack Simply M&S British Oakham chicken skinless breast fillets, cut into small chunks - 16g tikka masala spice kit - 150g pot Simply M&S low-fat probiotic natural yogurt - juice 1/2 lemon - Italian extra virgin olive oil spray - 1 Simply M&S onion, finely chopped - 1 Simply M&S garlic clove, crushed - 15g fresh ginger, peeled and grated - 3 tbsp Italian tomato pure - 200ml reduced-fat coconut milk - 200ml chicken stock - 2 vine-ripened Rosa tomatoes, deseeded and diced - small handful coriander leaves, to garnish Method: 1. In a large non-metallic dish, mix the chicken with the marinade sachet from t he tikka masala spice kit. Stir in the yogurt and lemon juice, then cover and le ave to marinate for at least 30 minutes. 2. Heat the grill to hot and line the grill tray with foil. Spoon the marinated chicken pieces onto the grill tray, spacing the pieces out and reserving the lef t-over marinade. Cook for 5 minutes, turning halfway, until lightly charred but not cooked through. 3. Meanwhile, spray a large pan with olive oil spray and cook the onion, garlic and ginger for 10 minutes, stirring, until the onion is softened and starting to colour. 4. Stir in the reserved marinade, tomato pure and remaining spice sachet from the tikka masala spice kit. Cook for 1 minute, stirring, until fragrant. Gradually pour in the coconut milk and stock and bring to a simmer. Stir in the chicken an d tomato pieces, bring back to the boil, then cover and simmer gently for 5-10 m inutes until the chicken is cooked. Check the seasoning and serve with a sprinkl ing of fresh coriander leaves.
