Haricot Vert Recipe

Haricot vert is French for green beans. Haricot meaning beans and vert meaning green.

Ingredients:
5 tablespoons unsalted butter, softened 3 tablespoons finely chopped shallots 1 lemon 2 lb haricots verts or other green beans, trimmed

Preparation
Bring a pot of well-salted water to boil. Boil haricot vert for 3-5 minutes. Plunge them into an ice bath and drain the beans.

In a skillet melt two teaspoons of butter over medium heat. Add the shallot and saute them until theyre just translucent. Add the drained and cooled haricot vert back into the pot and toss them in the butter and shallots. Season with salt and pepper. Spread haricot vert and shallot onto a plate and squeeze a few drops of lemon juice and lemon zest over the dish. Serve immediately.
