500g (2 cups) plain Greek-style yoghurt 1 telegraph cucumber, peeled, halved, Bowl for yoghurt seeded 1 large garlic clove, crushed 1 tbs. finely chopped fresh chives 2 tbs. olive oil Salt, to taste Mini peter bread Bamboo skewers (pre soaked) Method: Step 1. 2. 3. 4. 5. 6. 7. 8. Instruction Marinade the chicken and thread them onto skewers. Heat a grill pan and cook until tender. For tzatziki, wash and grate cucumber and put in a muslin cloth with salt, over a bowl to drain. Mix yogurt with garlic, chives, oil, lemon juice and salt. Squeeze all the moisture out of the cucumbers and add to the yoghurt mixture. Taste and adjust seasoning as required.
