NFSC 365: Nutrition Counseling Skill Area: Community Nutrition Assignment Title: Nutrition Counseling Video What I learned: In this assignment I had the opportunity to role play as a nutrition counselor and counsel a fellow student using my motivational interviewing techniques. I learned how to use counseling techniques discussed in class, an oral assessment sheet and nutrition education handouts to best counsel this client. Reflection of the assignment: This assignment made me realize how challenging it is to counsel clients with a variety of nutrition issues and problems. Each client is different and I appreciate the knowledge I received from my undergraduate coursework that best gives me the information I need to counsel clients in the future. Relevance to the profession: Nutrition counseling is an important part of the Nutrition and Food Science field. The skills that I learned through this assignment have taught me that counseling can be used in every part of the nutrition field.
