Carrot Bread Pudding

For 6 people ( Ingredients 8 slices hardough bread


1/2 cup raisins, soaked 1 can Grace Carrot Juice 1 cup whole milk 1/2 cup sugar 1 medium egg 2 teaspoons vanilla 1 teaspoon cinnamon powder 1/2 teaspoon nutmeg, grated

Directions 1. Preheat oven to 180C (350F) and grease an oven-proof dish 8"x2" and set aside. 2. Dice bread and place in a bowl, add raisins. 3. Combine all remaining ingredients, whisk and pour over the bread and raisins. 4. Stir mixture and allow to soak for about 20 minutes. 5. Scrape mixture into the greased oven proof-dish and put to bake for 1 hour or until done.
