Peng 1 Dear UCF Dining Services,

I am writing this letter to you in hope to propose a solution to a current issue on many of the on-campus restaurants. I have noticed that on-campus restaurants such as Knightros do not regulate the consumption of fresh, local, and organic food. In the case of this proposal, I hope UCF Dining Services will start to enforce and regulate more fresh, local, and organic food either from the UCF Arboretum or from local farmers around the region at Knightros diner. I have chosen Knightros as the target restaurant because Knightros has already launched its vegetarian menushowing that more facilities and students are more aware of what they are consuming. So why not incorporate organic produces within the dishes as well in promoting even better health? In addition, last semesters Produce on the Patio has shown a great interests from students in consuming more organic and more local foods from region locals. Students around campus are indeed not only demanding better health but students are also demanding more organic food from local regions. Did you know that Princeton University has already started working with its dining services to increase organic food, local food, sustainable seafood, and antibiotic-free meet with its campus dining halls (Greening Princeton)? In turn, this shows us the great possibility of shifting from conventional to organic even for the UCF Dining Services. Thereby, we can start gear the shift at our very own UCF-owned restaurant, Knightrosstarting with the salad bar, and gradually move from there. As for the cost of initiating this plan, I hope we can discuss our plan with Homegrown Local Food Cooperative to gain their support for Knightros.

I know the change will not be drastic. However, each little step will help to shift the

Peng 2 change to the final goal of enforcing not only more organic into more Knightros dishes, but promoting students health. Thank you for taking your time reading my proposal and I hope we can work out a fresh yet health plan for future students.
