DANIEL CHOTARD SANCERRE 2012
VARIETY: SAUVIGNON BLANC
WINEMAKING TECHNIQUE: STAINLESS STEEL FERMENTATION IN ORDER TO
EXPRESS THE NATURAL VARIETAL CHARACTER AND SOIL TYPES OF THE
REGIONLIMESTONE, CLAY, AND KIMMERIDGIAN SOILS. THE WINE SEES SOME
TIME ON THE LEES TO PROVIDE A LITTLE TEXTURE.
REGION: FRANCE, LOIRE VALLEY, SANCERRE

TASTING NOTES:
LUSHLY TEXTURED AND EMINENTLY REFRESHING, ITS FINISH IS TARTLY
INVIGORATING AND PALATE CLEANSING WITH AN HERBAL PRESENCE.
OTHER NOTES:
DANIEL CHOTARD AND HIS WIFE, BRIGITTE, LIVE JUST OUTSIDE SANCERRE IN
THE VILLAGE OF REIGNY. THE CHOTARD FAMILY HAS BEEN MAKING WINE FOR
WELL OVER TWO HUNDRED YEARS. DANIEL FARMS THE SLOPES OF THE VILLAGE
CREZANCY-EN-SANCERRE, WHERE FLINT MEETS CLAY AND THE FAMOUS
KIMMERIDGIAN LIMESTONE. HE PRACTICES SUSTAINABLE FARMING, AND USES
ORGANIC COMPOSTS TO TREAT THE VINES. TYPICALLY, HE HARVESTS HIS
GRAPES LATER THAN HIS NEIGHBORS WHICH RESULTS IN LESS OF THE ACIDITY
SO TYPICAL OF THE APPELLATION. AGING THE WINE ON ITS LEES FURTHER
ROUNDS OUT THE TEXTURE.
PAIRING NOTES:
THIS IS A DELICATE AND MINERAL DRIVEN WINE WHICH WILL ACCOMPANY A
SIMPLY PREPARED WHITE FISH, BUT HAS SOME NICE RANGE DUE TO THE LEESY
CHARACTER OF THE WINE. THE ACID HAS A PRECISION WHICH CAN BE USED TO
CUT THROUGH A RICH BUTTER SAUCE, OR DRAW OUT MINERAL TONES ON
FRESH CRUDO OR SHELLFISH.
BRANCOTT SAUVIGNON BLANC 2013

THEIR BRIGHT FRUIT AND HERBAL CHARACTER HAS FORCED FRENCH
SAUVIGNON BLANC PRODUCERS TO EXAMINE THEIR PRACTICES, AND ADJUST
THEIR METHODOLOGY TO A MODERN CONSUMER.
FOOD PAIRINGS:
THIS WINE CAN BE MATCHED WITH GRILLED OAYERS, SALMON, POACHED
WHITE FISH, AND FRESH GREEN SALADS, OR OTHER HERBAL
ACCOMPANIMENTS. THE WINE HAS AN ACIDIC ELEMENT WHICH WILL CUT
THROUGH RICHER DISHES, BUT BE CAREFUL NOT TO OVERWHELM A MORE
DELICATE DISH. THE STRONG HERBAL TONES ARE IDEALLY PAIRED TO BRING
OUT SIMILAR MINTY, HERBY, OR PEPPERY NOTES.
LIOCO NOCO CHARDONNAY 2012

AND NAPA VALLEY. NOCO(ABBREVIATION OF NORTH COAST) IS THEIR SECOND
