Better Brownies (Serves : 16)

NB
To make the brownies rich and buttery, use
melted butter instead of the vegetable oil.
You can use self raising flour instead of the plain
flour & baking powder combo.




125ml vegetable oil
200g sugar
1 teaspoon vanilla extract
2 eggs
60g plain flour
5 tablespoons best quality cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
60g chopped walnuts (optional)

Preheat oven to 180 C / Gas 4. Grease a 23cm square baking tin.
In a medium bowl, mix together the oil, sugar and vanilla. Beat in eggs. Combine flour, cocoa, baking
powder and salt; gradually stir into the egg mixture until well blended. Stir in walnuts, if desired.
Spread the brownie mixture evenly into the prepared tin.
Bake for 20 to 25 minutes, or until the brownie begins to pull away from edges of tin. Let cool on a
wire rack before cutting into squares.
