They are fried
with oil or lard
(animal fat).
They are
sometimes made
with black beans.
Mexican Rice
Fried rice with
tomatoes,
peppers, and
other spices.
Peppers
Jalapenos are green.
Red hot chili peppers
are red.
Both are Spicy!

Bell peppers are
many colors. They
are not spicy.
Cheese
Mexicans use cheddar and
Monterrey jack cheeses.

Tomatillo
A tomatillo is a green tomato
with a paper-like shell.

Pre-cooking set up:

Chop/dice the:
Onions
Green bell peppers
Green onions
Tomatoes* if you want to add them

Cook:
The rice
The beans

Cooking time!
Step one
First place all the ingredients
inside a pre-heated pan.

Cook the chicken and the
vegetables together.

IF needed add Chicken broth
and water (1/2 cup) to the
mixture.

Add Seasonings/herbs on the
chicken and vegetables:
Fajita mix with a little bit of
olive oil
Or
Oregano, cumin, salt and
black pepper with a little bit
of Cayenne spice.

Remove the Chicken and veggies
place them in a bowl.
Step 2
Secondly, place the
tortilla over the pan
(keep the heat low).


And add the chicken
and veggies over the
tortilla on one side.

Step 3
Sprinkle cheese over the
chicken and veggies while
it is still on the pan.

You want the cheese to
melt evenly.


After cheese melts fold the
tortilla over.

Keep on the pan until both
ends stick together.

Flip to the other side to get
both folded ends crispy.

Finale step
Take it out of the pan and
place it on a plate.

Serve with salsa, rice, and
beans.
