The inspiration for these cupcakes comes from the dress Audrey Hepburn wore; a

yellow floral dress by designer Hubert de Givenchy for her film Funny Face in
1956.
PINEAPPLE CUPCAKES with CREAM CHEESE FROSTING (makes 28
cupcakes)
PINEAPPLE CUPCAKES:

2 cups all purpose flour


1 teaspoon baking powder
teaspoon baking soda
teaspoon salt
3 eggs
1 cups sugar
1 cup vegetable oil
1 teaspoon vanilla extract
cups sour cream
1 cups canned crushed pineapple

Preheat oven to 350 degrees F


In a mixing bowl. Sift the flour, baking powder, baking soda and salt together. Set
aside.
In the bowl of a stand mixer fitted with the paddle attachment, combine eggs
and sugar and mix on medium high speed for 5 minutes or until light in colour.

Turn the mixer speed to low and add in the oil and vanilla. Mix until blender.
Add in the sour cream and crushed pineaplle and mix until all ingredients are
incorporated.
Add in the dry ingredients and mix until just incorporated. Do not overmix.
Fill in the cupcake liner about 2/3 full and bake for 15-20 minutes, or until a
toothpick inserted comes out clean. Place cupcakes on a cooling rack to cool
completely. Meanwhile, make the cream cheese frosting and pineapple flowers;

PINEAPPLE FLOWERS:

1 fresh pineapple

Preheat the oven to 225 degrees F


Peel the pineapple and cut into thin slices as thin as you can. Arrange in a
single layer on a parchment paper-lined baking sheet.

Bake for 30-35 minutes per side, turning over halfway.


Place each flower inside a muffin tin so that it retains its flower shape. Set aside.

CREAM CHEESE FROSTING:

cup unsalted butter, softened at room temperature


1 packet of 80z cream cheese, softened at room temperature
2 cups confectioners sugar
1 teaspoon vanilla extract.

In the bowl of a stand mixer fidded with the paddle attachment, combine butter
and cream cheese on medium speed until light and fluffy
With the mixer on low, gradually add the powdered sugar until combined. Add
vanilla extrat and then turn up the speed to medium-high and beat for 5
minutes.

Frost the cooled cupcakes and top each cupcake with the pineapple flowers.
